Eva Ewers
European trained Sommelier and proprietor.
Born in Châtellerault, France, Eva began her pursuit of a culinary career at an early age. At 15 she became a student of the Hotel, Restaurant, and Culinary Arts school in La Rochelle, France. This formal education would continue for a total of 5 years.
In 2000, Eva completed the last year of her internship at the Beau Rivage in Mississippi. It was there that she met her future husband, Timothy Ewers. After her graduation in 2001 in France, Eva moved to the United States and worked beside Tim at the Beau Rivage.
She also managed the 27th Avenue Bistro in Gulfport, Mississippi at age 20.
Eva and Tim followed the same route of employment until 2005, with Eva working as a receptionist, waitress, and a restaurant and boutique manager in England and France, respectively.
In 2006, Eva was able to achieve a dream born in Culinary Arts school by taking a sommelier course taught by Mr. Franck Thomas—ranked 4th best Sommelier in the world in 2000—to become a trained wine professional. As a graduate, Eva was bestowed the title of Sommelier in 2007 and was employed at the wine Boutique Cave Les Sens in Antibes, France. She then joined Tim on board the Inevitable and started the charter season as a stewardess.
Eva settled in Wisconsin in 2008. The state has since become her home.
Eva’s background, education, and experience is a definite asset for Le Chateau. She enjoys bringing a fresh look, and simple, yet refined ideas about the service industry to the La Crosse region. Sharing her native culture’s food and wine, which may be unfamiliar to some in Wisconsin, is one of Eva’s great joys.
